đŸŒ· COLD PORRIDGE PARFAIT FOR SUMMER đŸŒ·

 

I would not call this creation as a traditional overnight porridge. Yet the choice of words didn’t feel quite right for this breakfast, because of how it has been made. Usually when talking about overnight oats, it means that the raw oat flakes has been swelling over night in a liquid but in this one I have cooked the oats on a previous day. And why is that? đŸ€”

I braised this porridge day before with oat milk and slowly added egg white to make it more fluffier, richer and to give you long-lasting energy for your day. Also your body will absorb the beta-glucan better, which is good for your metabolism.

In classic overnight porridge, the ingredients are mixed with oatmeal in the evening and allowed to simmer in the refrigerator overnight. In order to get a lot of porridge, you need to add a lot of flakes. You get relatively more material by swelling the flakes in warm liquid. At the same time, the porridge becomes fluffier.


 

Porridge (2-3 servings)

  • 2dl unsteamed oat flakes

  • 3dl liquid for cooking (water,milk etc.)

  • 4 egg whites

  • Chia- seeds and maca powder (Maca is a good morning booster 😉)

  • Seasoning (Vanilla, cardamom or cinnamon)

  • Berries (fresh or frozen ones. I love frozen strawberries sometimes even more than the fresh ones :D.. crazy

  • Add for example yogurt, milk (regular or plant based), cottage cheese and berries, crushed Wasa crispy bread <— My favorite đŸ€Ż.

STEPS

  1. Roast slightly both the oats and the seasonings in a pot to get more flavour on oats.

  2. Bring oat milk to boil.

  3. Add roasted oats gently.

  4. Braise for few good seconds and let it cool down little bit before adding egg whites

  5. Add egg whites slowly and whip same time. Avoid aggro whipping. Whipping affects the texture of porridges fluffiness and puffines and also makes it pap.

  6. Be gentle ❀. If you see white stripes, egg whites cooks too fast and you won’t get good emulsion. We don’t want to make porridge with scrambled eggs, right? 😉

  7. Once egg whites are cooked add chia-seeds, salt and more seasoning if needed, maca-powder

  8. Porridge is ’ready’  when you let it sit for a while and see a crispy skin on the sides. I’ve noticed this one happening in unsteamed oats which stil has all the nutrients left.

    Now we’re ready to add the rest of the stuff and put in a fridge to set. ❀
